How to Make It
-
Preheat a grill pan to medium-high, and your oven to 350°F. Brush the flatbread with olive oil on both sides and place on a baking sheet.
-
Grill the peach slices for a few minutes on each side until lightly charred.
-
Arrange the goat cheese, peaches, and thyme over your flatbread. Season the whole thing with salt and pepper.
-
Bake for about 10 minutes until the edges are crisp.
-
Remove from oven and finish with a drizzle of balsamic glaze and fresh basil.

Tips for the Best Flatbread
-
Use ripe peaches to get the best flavor. Firmer ones won’t caramelize as well.
-
Less is more. Be sure not to overload it. This isn’t a pizza.
-
Watch the oven. Don’t crisp into oblivion.

FAQs
Can I make it ahead of time?
You can grill your peaches in advance, but wait to assemble until just before serving.
How should I store the leftovers?
Store your flatbread in the fridge in an airtight container. Reheat in the oven at 350°F until just warm.
Can I skip the grilling?
Sure. Roast your peaches at 400°F for about 10 minutes for a slightly different (but still delicious) caramelized effect.
What’s a good wine pairing to go with this?
Chilled Sauvignon Blanc, dry Rosé, or bubbly Prosecco go best with this dish.
